Cool down the coffee. Whip the egg yolks to snow. Beat the egg yolks, sugar and amaretto until creamy, then fold in the mascarpone and snow. In a gratin dish, or possibly similar, alternate layers of cream and sponge cake (the sponge cake is lightly coated with the coffee). Refrigerate the whole now in about 4 hours. Before serving, drizzle with cocoa.
