Cook the steaks in not too heavily salted water in a pot until they are soft enough that the meat fibers can be easily separated from each other (depending on the quality, about 1 hour). To do this, flatten the softly cooked steaks beforehand and then separate them with your fingers.

Now halve the chili peppers, remove the seeds and, together with the garlic cloves, coriander, brown sugar and galangal root, pound them finely in a mortar (or puree them in a blender). Mix with a strong pinch of cloves, freshly ground pepper, salt and crab paste. Then heat some oil in a wok or heavy pan and fry the paste in it until its aroma develops nicely.

Add the meat, stir well and dry roast the meat. Meanwhile, squeeze the lime and finally stir in the juice. Remove from heat, drain slightly on paper towels if desired, and then let cool slightly.
