For the lentil soup with ginger, finely chop the shallot and sauté in hot peanut oil until translucent, add water and coconut milk.

Add washed lentils, finely chopped ginger and paradeis pulp and simmer for about 10 minutes until lentils are soft. Season to taste with lemon juice and salt.

Serve the lentil soup with ginger sprinkled with parsley. If you like, eat a slice of toasted bread with it.
