Rinse the lemon with hot water. Squeeze the juice from one half. From the other half of the lemon, cut the end small, as it will not be used, then cut the lemon half into four slices and cut them in half.

In a baking bowl, mix the juice of one lemon and half of the olive oil. Cut the pork tenderloin into medallions (two medallions per unit) and add to the marinade form with the lemon slices. Leave to marinate for ten minutes.

Preheat the oven to 120 °C and heat a plate with it.

Heat the remaining oil in a pan. Using a kitchen knife, wipe the marinade off the medallions and lemon slices, collect and set aside. Season the medallions with salt, pepper and nutmeg. Sear in hot oil for a minute and a half on each side until hearty. Transfer to the preheated plate and cook briefly in the 120 °C oven.

Add the lemon slices to the roast, sprinkle with sugar and roast for one minute on each side. Add to the meat.

Melt the gravy with the sherry, the soup and the collected marinade, then make it well half. Add the cream and continue to make the sauce until it thickens slightly. Then add the freshly chopped herb leaves and the dried tomatoes cut into strips. Season the sauce with salt, pepper and a little sugar if necessary.
