For the curd rolls, mix curd with all other ingredients except the puff pastry. Roll out puff pastry, cut into rectangles, brush edges with water, spread some of the curd filling on one narrow side.

Cut the remaining dough 3 times, roll up the dough pieces and place them on a coated baking tray. Beat the egg and brush the rolls with it.

Bake in the preheated oven at 180 °C for about 20-25 minutes until golden brown, while still hot brush with the apricot jam.
