Snamenitie Sibirskie Pelmeni (Siberian dumplings)

For the dough, mix flour with salt, eggs and enough water to make a smooth, firm dough (aehlich like pasta dough). Knead thoroughly, wrap in plastic wrap and refrigerate for a good 2 hours.

For the filling, remove the peel from the onion and garlic clove, dice finely.

Stir through with meat and clear soup, season strongly with salt and freshly ground pepper.

Roll out dough thinly (best between cling film), cut out 50 circles of about 6 cm ø with a glass. Form 1 tsp of the filling on each circle, brush the edges with egg white. Fold the dough into half circles, press the edges well together and turn both tops of the half circles once around each other.

Cook pelmeni in enough salted water for 10-15 minutes over medium heat. Serve as desired with melted butter, peppery vinegar, sour whipped cream, ketchup or whipped cream.
