For the tarte flambée dough, make an initially somewhat crumbly, firm dough from the ingredients using your hands. Then knead with a little flour by hand or with a food processor for about 5 minutes to a smooth, but still quite dry dough.
Then shape into a ball. Wrap the dough in plastic wrap and let it rest for about 30 minutes. Then divide the tarte flambée dough in half, roll out thinly and top as desired.
