Instructions:

For the carre steak with quick sauce, salt and pepper the steaks on both sides. Heat oil in a pan and add the carre steaks. Lightly press garlic cloves with the flat side of a knife and add with rosemary sprigs. Sear the steaks on both sides, cooking for about 5 minutes per side, until cooked through but still juicy. Lift the steaks out of the pan and keep warm.

For the quick sauce, pour the leftover drippings with sweet wine and bring to a brief boil. Stir in the butter and season with a dash of lemon juice.

Arrange the carre steaks on a plate, drizzle with the quick sauce and serve.

As a side dish we recommend potatoes or a fresh salad.
