For the spelt fritatta soup, finely grind the spelt, mix with enough water or rice milk to make a viscous dough, let it swell for about 20 minutes.

Bake the dough in a pan with hot oil to pancakes, then let cool and cut into thin strips.

Pour boiling hot vegetable soup over the pancakes and sprinkle the spelt pancake soup with finely chopped chives.
