For the curd cheese crumbles, beat egg whites to snow. Stir in yolks and curd cheese. Mix in spelt flour and baking powder.

Spread the mixture on a baking tray covered with baking paper and bake at 180° for about 10 minutes.

After cooling, cut the curd cheese into pieces and serve in clear vegetable soup with finely chopped chives.
