A simple but delicious cake recipe:

Reserve a quarter of the bananas for the garnish, mash remaining bananas. Whip the curd and cream with a whisk until fluffy. Mix powdered sugar and vanilla sugar. Fold into the curd mixture together with the banana puree.

Cut away the “cup” of the cake pieces. Using a large kitchen knife, cut the cake pieces diagonally in half. Cut in half diagonally.

Spread one piece with banana curd and top each with the second piece.

Place two “cake sandwiches” on each plate.

Dilute remaining curd with milk so that it becomes thick. Pour onto cake and plate. Slice banana half set aside and use as garnish. Crumble the cut away cake pieces on top.

Bring to table immediately.

Note: If you wish to prepare the dessert, do not mash the bananas until before serving, as they will turn the curd a grayish color if left to stand longer. Up to and including “diagonal de-branching” you can otherwise prepare everything together. So that the cake pieces do not dry out, cover them with plastic wrap.
