Preparation (circa 40 min):

Peel carrots and celery and cut into small cubes. Make a cross cut in the broccoli and cauliflower florets on the stem, clean the leeks and cut them into small lozenges. Cut the beans into small pieces at the top and bottom and cut them into thirds.

Sauté onions in hot olive oil until translucent, add all vegetables together and sauté briefly. Then add garlic, fill with vegetable soup and simmer on low heat until the vegetables are cooked al dente. Then season with salt and pepper.

Beat the butter with the eggs over a hot water bath until creamy, add the curd and mix. Add semolina and poppy seeds, fold in well and season with salt and pepper. Allow the mixture to swell briefly, cut out dumplings and place in lightly bubbling salted water for about three to four minutes.

Serve the stew in a deep dish, add semolina and poppy seed dumplings and sprinkle with chive rolls.
