Spicy Mango Papaya Salad with Sesame Tuna Sticks

Instructions:

For the spicy mango-papaya salad, halve the papaya lengthwise, peel, seed and slice diagonally. Peel the mango as well and cut the flesh into sticks. Cut tomatoes into quarters, remove seeds and cut into cubes. Cut the spring onion into fine rings.

Wash the frisée lettuce in cold water and spin dry. For the dressing, seed the chili pepper and cut into fine rings. Mix the sesame oil, lime juice, fish sauce and chili rings. Stir in the papaya, mango, tomatoes, scallions and cilantro.

Cut tuna into slices (about 1, 5 cm thick), then into strips – about the shape of regular fish sticks.

Mix the egg with honey. Season the fish sticks with salt and pepper, pull them through the honey-egg and roll them in the sesame seeds. Fry in hot oil until crispy on all sides – this should be done very quickly, 1-2 minutes maximum, otherwise the tuna will be dry.

Mix frisée salad with the spicy mango-papaya salad and arrange on plates. Spread the sesame tuna sticks on top of the salad.
