Instructions:

Rinse the meat and rub dry. Rub all around with salt and pepper.

For the filling, mix the breadcrumbs with the chopped herbs, eggs and diced onions. Season well with salt and freshly ground pepper.

The filling on the inside of the meat form. Leave the edge free. Roll up the meat from the narrow side. Wrap with cotton yarn.

Fry the roast in hot clarified butter all around. Roast in a heated oven at 220 °C for about ninety minutes. Pour water in between.

At the end of the cooking time, leave the roast to rest for ten minutes in the switched-off oven, then cut into slices and arrange on a platter.

Serve with carrots and parsley potatoes.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these are also characterized by a fresh taste!
