For the pumpkin seed egg gnocchi first make the gnocchi dough. Whisk the egg with the oils and salt. Mix flour with pumpkin seed flour and add. Pour in milk and mix well until a firm, tough dough is formed.

With the Nockerlhobel plane the dough into boiling salted water. Boil briefly, strain. Heat oil in a pan and toss the dumplings in it.

Pour the beaten eggs over them and let them set. Season with salt and pepper. Before serving, sprinkle the pumpkin seed egg gnocchi with onion leek or chives.
