Clean and rinse the spring onions, cut the green part into fine rings and put aside for garnish. Cut the white part into 1 cm long pieces, sauté in half of the butter and add the tender wheat. Add the clear soup and cook the tender wheat for about fifteen minutes.

Just before serving, fold in the remaining cold butter and season the tender wheat ragout with salt and pepper.

Tips The tender wheat ragout goes great with stuffed tomatoes with chicken.

With tender wheat, instead of spring onions, you can also prepare tomatoes and olives. On this everything together gets a Mediterranean touch.
