Instructions:

Crumble the butter with the flour, baking soda and orange zest. Quickly knead the dough with the powdered sugar, vanilla sugar, grated almonds and the egg and let it rest in the refrigerator for at least 2 hours.

Then roll out the dough on a floured board, cut out the Easter chicks and place them on a greased baking tray. Bake at 160 °C for about 15 minutes. Allow to cool.

Mix the egg yolk with enough powdered sugar to make a thick mixture. Brush the chicks with it.

For the eyes, apply some melted cooking chocolate with a toothpick. For the beak, mix some apricot jam with powdered sugar and brush on. Let dry and store in a cookie tin.
