For the baked salami toast, spread the toast slices with butter on one side. Top with salami and Emmental cheese, then spread with mustard and top again with salami. Cover with a slice of toast (buttered side in). Dredge toasts in flour, beaten egg and bread crumbs. Heat oil in a frying pan and fry toasts in it like cutlets. Remove and pat dry on paper towels. Cut in half diagonally and arrange.
