For the cutlet roast, season the pork belly whole with salt and pepper and rub with your hands. Flour the whole roast, pass it through the well beaten eggs and then cover it with breadcrumbs all around and press it down well.

Heat clarified butter in an ovenproof skillet and sear breaded pork belly, turning when nicely golden brown and searing other side.

Place pan with cutlet roast in preheated oven (180°C) and roast for 45 minutes. Then turn the roast and leave it in the oven for another 45 minutes. Then cut the roast into slices and serve with potato salad or Vogerlsalat with beans and core oil.
