For the Bread & Butter Pickles peel onion and cut into rings. Washed cucumber cut evenly into slices.If you value optics, take a cutting tool that makes the familiar beautiful edges. In a large bowl, mix cucumber slices and onion with a lot of salt, cover with a cloth and press down with a heavy object if possible. It is best to leave well overnight.

As soon as the vegetables have left water, drain them, rinse them vigorously with water and then pat them a little dry with kitchen paper.

Heat the mustard, vinegar, sugar, coriander and celery in a saucepan, stirring until the sugar is completely dissolved. Continue to simmer gently for a few minutes.

Add cucumber as well as onion and simmer the whole thing for about 1 minute more until everything is nicely warmed.

Make canning jars sterile and pour in the vegetables. Add enough vinegar to cover the vegetables completely. Close well and store away from light.
