For the pumpkin soup, first wash the pumpkin, cut in half and remove the seeds with the help of a spoon. Then cut the flesh, including the peel, into cubes.

Peel the onions and cut them into small cubes. Peel the ginger and cut it into small cubes as well. Finely chop the chili pepper. Place the onions, pumpkin flesh and ginger in an unperforated steamer basket with the orange juice and half of the vegetable stock.

Add the spices and steam in the steamer for 25 minutes at 100 °C. Then remove the bay leaf, pour the soup with the remaining vegetable stock and blend.

Now heat for another 5 minutes at 100 °C. Then add the butter and blend the pumpkin soup with a hand blender until frothy.
