Duck Breast with Raisins

For the duck breast with raisins, sauté the shallots in butter, add the garlic, raisins and mushrooms. Remove the pan from the heat and add the thyme and parsley.

Remove skin from duck breast. Cut the skin into small cubes and fry in a frying pan until crispy grams are formed.

Slice the breast horizontally almost all the way open and thinly plate. Season with pepper and salt and spread with the raisin mixture. Sprinkle the duck grams on top and roll up. Wrap the roulade in bacon slices.

Brown the roulades on all sides in a frying pan with clarified butter. Extinguish with some red wine and steam the roulades in it for 10 minutes at low heat until soft. Bring the juice to the boil again, reduce slightly and thicken with 1 tsp. butter.

Cut the duck breast with raisins into thick slices and serve!
