Instructions:

Preheat oven to 180°C.For the potato zucchini vegetables, wash and brush potatoes. Pre-cook in a steamer insert for about 15 minutes, peel and cut into rough pieces. Place two pieces of aluminum foil, place the sliced potatoes and zucchini in the center, season with salt and pepper, place a sprig of thyme on each and drizzle with olive oil. For the herb fish, place a fish fillet seasoned with lemon juice, salt and pepper on each of two additional pieces of aluminum foil, sprinkle with lemon zest and herbs. Place all four aluminum packets on a baking tray and cook in the preheated oven for about 20 minutes.then open, serve the herb fish with potato zucchini vegetables.
