Roast Pork with Leek

Have the butcher score the pork rind crosswise on the roast pork from the shoulder. Season the roast with salt and pepper, rub the pork rind with caraway seeds. Cut out the dark green from the leek – then cut in half, rinse, clean and cut into 100 mm long pieces. Chop garlic clove and onion. Brown the roast in the roaster on all sides (constantly turn it to the other side until it is brown all around) – remove the roast – add a little new butter for it – then steam the leek, sprinkle with a touch of sugar.

Put the roast on the leek, extinguish all together with tap water and wine, cover and simmer on low heat for 1 1/2 hours. The last 10 min. put the roast under the broiler to get a nice crust. Then season the leek with its beautiful sauce with salt, lemon and pepper.

Serve with potato salad and farmhouse bread.

Tip: Lemons add a fresh touch to dishes. Consciously choose ripe, rich yellow lemons!
