Mix the basil leaves and pine nuts with the lemon zest, the soup, the vinegar and the olive oil in a high cup. Season the paste with salt and pepper.

Put the breadcrumbs in a deep dish. Peel and squeeze the garlic cloves and add them. Mix well.

Thinly chop the ends of each tomato, they will not be used. Next, cut each tomato into four thick slices.

Season both sides with salt and pepper and turn in bread crumbs to the other side.

Cut the mozzarella balls into slices.

Heat a tiny bit of olive oil in a non-stick pan and roast the tomatoes in portions briefly but heartily on both sides. Arrange side by side on a platter. Top each with a slice of mozzarella and spread with basil paste. Serve immediately.
