Instructions:

Peel all the vegetables if necessary and then cut them into small pieces. Cut the bacon into cubes as well.

In a high pot, sauté the onion with the bacon cubes, add chopped chili, rosemary sprigs and the pressed garlic.

Peel the potatoes raw and add them to the pot, also chopped, then add the rest of the vegetables and sauté for about 10 minutes. Now add vegetable broth and bring to a boil.

Add the canned tomatoes, tomato paste and fresh tomatoes. Add basil and let everything simmer for about 25 minutes.

Finally, add the spaghetti, broken into small pieces, and cook for about 9 minutes. Serve the minestrone sprinkled with parmesan cheese.
