Heat butter or lard in a saucepan and first fry the chicken giblets (without liver). After some time, add root vegetables and onions, continue roasting and add chopped parsley. Once the vegetables are evenly brown, dust with flour and continue roasting. Add water, flavor with a little vinegar or lemon juice and slowly cook the chicken giblets until soft. Add the liver cut into pieces. Season with salt, pepper, nutmeg and lemon zest and bring to the table.
