Ham and Spinach Omelet

Instructions:

1. ham cut into cubes. Remove the peel from the carrot, rinse and finely dice. Remove the skin from the onion and chop. Clean and rinse spinach.

Sauté ham, carrot and half of the onion in a frying pan in 1/2 tsp. hot oil. Add spinach and sauté. Season.

3. mix eggs and milk, season. Pour over vegetables. Cover and cook for 10-12 min.

Sauté remaining onion in 1/2 tsp hot oil until soft. Add tomatoes and simmer on low heat for about 5 min. Season with salt, pepper and sugar. Serve the tomato sauce with the omelette.
