For the herb vinegar, pick yarrow and thyme when they are still dewy. Dry the herbs in a salad spinner, cut them coarsely and put them into a suitable container (Rex glass). Pour the vinegar over them and close the jar tightly.

Put the jar in a sunny place (windowsill) and shake it well every day. After 14 days you can strain the vinegar and fill it into small bottles.
