Remove exactly the fat and tendons from the poultry livers. Cut the livers in half, place in a sieve, briefly rinse with cold water and drain well.

Clean the chestnut mushrooms, rinse only if absolutely necessary, cut in half. Remove the skin from the potatoes and cut them into 1 cm cubes. Remove the skin from the shallots and cut into small cubes.

Foam half of the butter in a frying pan and sauté the chestnut mushrooms. Sprinkle with the finely chopped rosemary needles and season with salt and pepper. Roast the mushrooms until golden brown. Later add the shallot cubes and the liver halves and sauté. In the meantime, fry the potato cubes in hot fat until golden brown. Drain and degrease on kitchen roll, mix with fried livers and mushrooms. Stir in chopped caraway and parsley and add the poultry jus. Make short and distribute evenly on preheated plates.
