Instructions:

For the mocha boats, prepare the short pastry as described in the basic recipe.

Preheat the oven to 170 ºC hot air.

Roll out the dough on a work surface sprinkled with flour. Cut out the cookie boats and place them on a baking tray lined with baking paper. Bake for approx. 12 minutes.

Stick two cookies together with apricot jam. Brush with coffee glaze and top with a mocha bean.
