For the noodle soup with beef, first blanch (scald) the rice noodles with boiling hot water and soak, but they do not need to be boiled, but wheat noodles need to boil in salted water.

Boil beef broth, add garlic and ginger through the press. Let the vegetables steep in this broth for a few minutes. Add the spring onions and spinach to the clear soup just before serving.

Season with soy sauce, pepper and juice of one lemon, add the drained noodles.
