Instructions:

Cut the snapper lengthwise into 2 or 3 strips, then cut diagonally into narrow strips. In a baking bowl, mix tomatoes, onion and jalapeno. Melt butter in a gr. frying pan, sauté fish 2-3 min until just white. Add tomato mixture, do another 2-3 min, stirring. Add lime juice and cilantro, season with s. Serve with warm kukuruz tortillas or tortilla chips and maybe a green leaf salad.

Totally tasty when it’s hot outside and ready in less than 30 min.
