For the venison steak wrapped in bacon, rub the fillets all over with Franzl’s game spices.

Sear briefly on both sides in oil, wrap with bacon, fix with toothpicks and continue to roast in the oven at 160°C convection oven for 20 minutes.

Make a marinade with red wine, calvados and mustard and pour it over the fillets. At the end, dress with cold butter and do not heat the resulting juice.

Cook the polenta according to the instructions and stir in the finely chopped chestnuts and Gorgonzola.

Serve the venison steak wrapped in bacon with chestnut polenta.
