Instructions:

Cut the lamb into narrow strips with a sharp knife or kitchen cleaver.

Heat the vegetable oil in a preheated wok or large frying pan.

Add the strips of lamb, garlic and leek and sauté for 2 to 3 minutes.

For the sauce, mix the cornflour, soy sauce, Chinese rice wine or possibly dry sherry, water and chili sauce together well.

Add the sliced mushrooms to the wok and fry for 1 minute.

Add the prepared sauce and cook for 2-3 minutes until the lamb is cooked through and tender.

Drizzle the lamb as well as the mushrooms with sesame oil and place on a warmed serving plate. Garnish with red chilies and bring to the table on the spot.
