For the waffles filled with apple matcha cream, separate the eggs and beat the egg whites with a pinch of salt until stiff. Beat the butter with the sugar until creamy and gradually stir in the egg yolks. Mix the flour with the starch and stir into the butter mixture with the milk. Finally, fold in the beaten egg whites.

Heat the waffle iron, grease lightly and pour in some batter. Bake the waffles one after the other until golden brown and let them cool down.

Mix the cream cheese with the applesauce, lemon juice, honey and matcha, whip the whipped cream until stiff and fold in gradually.

Fill the cream into a piping bag with a star nozzle, squirt onto half of the waffles and cover each with another waffle. Cut the waffles filled with apple matcha cream in half and serve garnished with mint.
