For the Krampus charcoal, first sift the powdered sugar. Mix 2/3 of the powdered sugar with the egg white, the lemon juice and the food coloring.

Then stir in the remaining sugar. The consistency should be firm. The mixture should no longer drip from the whisk. If necessary, add more powdered sugar until this consistency is reached. Whisk in as much color as needed to create a deep black. Set aside.

Line a baking pan (about 20 x 20 cm) with parchment paper.

Heat water and granulated sugar in a (preferably coated) saucepan. Stir to give the mixture the consistency of wet sand.

Heat until the mixture reaches about 126 °C (measure with a sugar thermometer). It will turn brownish, but should retain the consistency and in no way become runny.

Stir in the black sugar mixture and pour the mixture into the prepared mold. Allow to harden (preferably overnight).

Remove the Krampus charcoal from the mold and break into “charcoal pieces”.
