Chocolate Mousse with Coffee and Brandy

Instructions:

Beat egg yolks and sugar with a hand mixer in a stainless steel bowl until thick, add milk.Heat the mixture in a hot water bath for 10 min while stirring, then lift out and cool.

Melt dark chocolate, mix in coffee and brandy. Beat in soft butter in small flakes until a smooth cream forms.

Mix both creams, cover well and set aside to cool.

Whip the whipped cream and egg whites separately until stiff. First fold the whipped cream, then the snow into the chocolate cream. Fill the cream into portion glasses and refrigerate for at least 3 hours until firm.

Decorate with chocolate chips and cocoa powder.

Tip: Feel free to use better chocolate – the more delicious the result will taste!
