Curry Potatoes in Tomato Sauce – Aloo Ki Sabzi

Instructions:

Heat the oil in a heavy bowl. Pour in cumin (whole) and curry or cumin, bay leaves, coriander (ground), paprika, turmeric and salt. Add tomatoes and parsley and let the liquid boil away.

Add potatoes and sauté for 5 minutes. Add tap water and let it boil, stir properly. Cover and sauté over medium heat for about 20 minutes.

Remove lid and sauté at low temperature for another 5-1000 cmin, stirring occasionally, mashing a few potatoes to thicken the sauce. Add the juice of one lemon and season.

Ice for several days.

Indication in the recipe: 8 servings – may be meant only as a side dish, as a main course rather 4 servings.

Tip: Lemons add a fresh touch to dishes. Choose deliberately ripe, rich yellow lemons!
