(*) Recipe for 8 Petit Filou molds Boil the milk with the honey and lemon zest, add the lemon thyme and infuse for 15 minutes.

Then strain everything together through a sieve.

Whip the yolks with the spiced milk and sugar over boiling hot water until creamy, then whip again until cooled. Fold in the whipped cream and pour the mixture into small petit filou molds. Place in freezer for about 3 hours.

Serve: Decorate the frozen parfaits with seasonal fruits, fruit sauces and fresh mint.

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
