For the apple and bean dip, soak the beans in water overnight. The next day, cook in fresh water until soft.

Wash and core apples and add to stew at the end of cooking time. Let cool and then puree.

Season the apple and bean dip with ginger, lemon juice, pepper, salt, vinegar and sage leaves.
