For caramelized fennel, wash and dry the orange, grate the zest and squeeze out the juice. Wash and trim the fennel, set aside the fennel greens and cut the fennel bulbs into 1 cm thick slices.

Finely chop fennel greens. Mix orange juice with maple syrup, thyme, sesame oil and salt. Place fennel slices in a bowl and pour marinade over them. Dice feta and mix with grated orange zest.

In a large skillet, heat olive oil and fry fennel slices until brown on both sides, drizzling marinade over and over (3-5 minutes per side).

Arrange the hot fennel slices on warmed plates, top with feta, drizzle with the remaining marinade and sprinkle with the fennel greens.
