Clean all vegetables and cut into equal cubes, the spring onion very finely. Sauté the onions, potatoes, carrots and celery in a little olive oil. Add the spelt, pour the poultry stock and cook over moderate heat for about 15 minutes, until the vegetables are firm to the bite. Only then mix in the diced zucchini and tomatoes. Season with sea salt and some freshly grated nutmeg. Bring to the boil again briefly. Before serving, drizzle with the best olive oil and garnish with the spring onions.
