For the cheese spaetzle, whisk eggs and add to flour. Add salt, water and mix well. Bring salted water to a boil in a large pot.

Using a spaetzle slicer, add dough to the water in batches. Spaetzle are done when they float to the top. Lift out of water and drain well. Grate cheese, cut onion into rings, heat butter in a pan and roast onion in it until golden.

Mix the spaetzle with the cheese in a pan and heat until the cheese has melted. Put the roasted onion on the cheese spaetzle and serve in the pan.
