Cream butter, egg yolks and sugar. Crush chestnuts, sprinkle with rum and add to the mousse with breadcrumbs, carefully stir in the snow and pour the mixture into a buttered baking dish sprinkled with breadcrumbs. Bake in the oven for 40 minutes at about 180 °C. Serve the warm casserole with cold wine sauce.
