Instructions:

Put long-grain rice in a saucepan, pour cold water over it, add salt, cover saucepan and let it boil briefly. Simmer on low heat for 20 min until the liquid has evaporated and the long-grain rice is cooked and dry. Add butter and set aside to cool.

In the meantime, simmer chicken breasts in hot clear soup for about 30 min. Remove and cool, then chop.

Remove peel from nectarines and kiwi. Cut nectarines into small pieces, kiwi into slices.

Mix chicken and fruit with the cooled long grain rice, season with salt and curry and bring to the table.

In addition, a peeled, chopped avocado can be mixed into the leaf salad.

Tip: If you don’t like raisins, simply omit them.
