For the pickled garlic, peel the individual cloves. Bring all the ingredients, except the garlic and olive oil, to a boil in a saucepan.

After boiling, add the garlic and simmer for 3 minutes. Fill the hot garlic mixture into jars and cover with olive oil. Leave the jars closed for a minimum of 10 days to infuse before eating.

The pickled garlic is also ideal as a souvenir or possibly as a gift.
