Liver rinse and dry. Clean, drain and chop the mushrooms. Clean spring onions, rinse and cut into rings. Roast liver in hot oil, season and keep warm. Sauté mushrooms and onions in hot fat. Add sour cream or crème fraiche, season everything together with sage, low-sodium seasoning and pepper. Serve liver with mushroom vegetables and cherry tomatoes.
