Pasta dishes are always a good idea!

Carefully rinse and remove the stems from the spinach. Pluck into bite-sized pieces. Cut tomatoes into cubes. Cook pasta ‘al dente’ according to package directions. Rinse with cold water, drain in a colander. Cut garlic, onions and lamb into thin slices.

In a large saucepan, heat the oil. Add garlic, ginger and onions. Saute for about 5 minutes, until onions are browned. Add lamb and diced tomatoes and sauté/stir-fry for another 3-5 min. until lamb is no longer raw. Then add clear soup, soy sauce and paprika powder, bring to a boil. Reduce temperature and simmer 5 to 10 min (until lamb is cooked).

Add noodles and spinach leaves and do another 5 min. Season with salt, soy sauce and paprika if necessary.
