For the olive puff pastry sticks, first line a baking tray with baking paper. Preheat the oven to 200 °C. Whisk the yolks and milk.

Roll out the puff pastry. Cut the dough into 2 pieces, one of which should be a little larger than the other.

Place several rows of olives on the smaller half of the dough, evenly spaced (rather larger). Brush the spaces in between with the yolk and milk mixture. Place the larger piece of dough on top and press down well. Now cut the dough crosswise into strips. Place the sticks on the baking tray.

Place the olive puff pastry sticks in the oven for about 10 minutes (or according to package instructions).
